An old tradition

The cultivation of olives traces back to the Phoenician and Greek civilizations. In the V century b.C., Tucidide wrote: “Mediterrean populations begun to evolve from barbarism when they learnt how to cultivate olives and grapewine” identifying in an unequivocal manner the relationship between Mediterrean cultures and olive oil.

Time by time, the cultivation of olives has become more and more relevant for all rural communities in the south of Italy, especially in the southern part of Campania (one of the 20 Regions in Italy), where the name of many villages and towns still resembles this old tradition (e.g., Sanza, Ogliastro Cilento, Oliveto Citra, …). In these bourgs one may still find old religious rites and cultural beliefs which refer to the cultivation of olives and/or the extraction of olive oil. Not surprisingly, San Rufo’s official coat-of-arms consists of two twigs, respectively of olive and oak, surrounding the shield of silver heart with a wood-coloured baton.

San Rufo's olives can be used for the production of olive oil, paté, pickled olives, and, more in general, in typical dishes of the Mediterranean diet. The high quality of San Rufo's olives is attested by the official recognition for the production Dop Olive-Oil "Colline Salernitane" OP: Reg. CE n. 1065 del 12.06.97 (GUCE L. 156 del 13.06.97), which has to be extracted from local olive species: Rotondella, Frantoio, Carpellese or Nostrale for 65% at least; Ogliarola and Leccino, for no more than 35%; other species, for no more than 20%.

Olives are harvested in Autumn, from October to December.

Every seller willing to participate to the No-Firm Food programme is required to apply no later than 15 April, indicating, if possible, the amount of olives obtained in the previous year.

The list of No-Firm Food sellers is published on the Official No-Firm Food website on 16 Apr. Booking before this date is not admitted, so that these emails will be not taken into account for the definition of chronological priorities. Similarly bookings received later than 30 September won't be considered. Consumers are required to book via email (nofirmfood.sanrufo@email.it) indicating the No-Firm Seller they are willing to buy from. At this stage, more than one seller can be selected. Booking does not imply any sort of obligation to buy, as booking is only required to set the chronological priority for each consumer due to the limited quantity of available product.

Each No-Firm Food seller must communicate to GLaSS the harvesting period (no less than 15 continuous days) no later than 30 September. The latter information is published on the official No-Firm Food website and communicated via email to all potential customers.  Each consumer, in order to conclude the transaction, is required to be present, at least for one day, during the harvesting period.

A priority is assigned to each consumer on the basis of the chronological receipt of the booking-email. Priorities are published on line by using the personal code communicated to each consumer.

After 30 September, consumers will be invited via email to confirm the transaction for which a priority has been assigned. In the case of no answer within 3 days, the priority will be cancelled out.

Instead, if the consumer confirms the transaction (within 3 days), then the consumer will receive from (nofirmfood.sanrufo@email.it) the phone number (email if available) and the bank account of the seller to pay - as security  deposit - the 20% of the transaction value. The deposit will not be reimbursed whenever the consumer does not conclude the transaction. The deposit is to be totally reimbursed if the transaction is not concluded due to an event of force majeure. The deposit has to be entirely paid back with an additional 10% of the deposit  when the transaction is not concluded due to some responsibility of the seller.

The price of olives is fixed every year on the 30 September and it is communicated to consumers together with the harvesting period of each seller (non-official price of olives is about 2,00 euro/Kg, corresponding to about 11,00 euro/Lt in terms of olive oil). The same information will be published on the official No-Firm Food website as well. The latter price is not subject to variation within the same year unless of events of force majeure.

After the transaction, the seller, whenever requested by the costumer, will grant for free the transport of olives to the oil mill "La Vecchia Carmine" in San Rufo for immediate milling.

*Official values will be communicated in September when state of nature has revealed.

 It is worth underlining that the recent discipline on agri-products traceability (DM 23/2013) does not apply to no-firm food sellers because, according to the art. 8 DM 23/2013, these cannot be identified as either "olivicoltori" or even "commercianti di olive" due to the small size of the activity and producing/selling modalities. Actually, the no-firm food programme clearly overcomes any problem related to the traceability of olives as the presence of the buyer at the harvesting is obligatory.

According to the demand and production of olives as observed at the 30 Sept., the price of olives in terms of olive oil is fixed at 10,00 €/Lt in terms of olive oil.
